It's spooky season! One way to celebrate is making Kaylan's Halloween Stuffed Peppers!
Ingredients (makes 4) 1/4 tsp crushed red pepper flakes 1 tsp Italian seasoning 16oz ground turkey (93/7) 4 x 2/3 cup black bean pasta 2 cups tomato basil pasta sauce 1/2 cup sliced red onions 1 tbsp avocado oil 4 medium bell peppers
Directions 1. Cook pasta (al dente) 2. Add avocado oil to hot pan and saute diced onion. 3. Saute ground turkey (or other meat/veg substitute) in avocado oil until golden brown. 4. While meat and pasta are cooking, start to prepare bell peppers and carve them like a Jack O'Lantern. 5. Place bell peppers on cookie sheet that has been prepared with parchment paper and preheat the oven to 350 degrees. 6. After draining pasta, gently fold into meat sauce mixture. 7. Fill each bell pepper Jack O'Lantern with the past meat sauce mixture. 8. Cook at 350 degrees for 25 minutes. Serve hot!
