Last week's Foodie Friday post was Maryann's Egg White Bite Recipe! Try this meal prep recipe for a quick, easy breakfast/snack option! This is a great way to get a healthy, protein-packed breakfast or snack in when you’re on the go!
You can swap out any of these ingredients for your favorites.
This recipe calls for:
➡️1/2 carton of egg whites (16oz or so)
➡️1 cup finely chopped spinach
➡️ 1/2 cup tomato, diced
➡️ 1/4 cup onion, diced
➡️ 1/2 cup mushrooms, diced
➡️ 1/4 tsp garlic powder
➡️ 1/4 tsp sea salt
➡️ 1/8 tsp black pepper
➡️ 1/4 cup shredded cheese
✅ Preheat the oven to 350 & spray your muffin tray. (For 12 muffins)
✅ Combine all ingredients except for the cheese in a bowl, and divide evenly and fill about 3/4 of the way. (You CAN blend them in a blender if you prefer without chunkier pieces of veggies)
✅ Top with cheese ( I only added cheese to half)
✅ Bake for 18-20 minutes or until fully cooked.
✅ Let them cool for 5 minutes and then remove them from the tray and let sit on a paper towel to absorb any water from the vegetables.
✅ Store in a Tupperware with a paper and enjoy cold or heat it up in the microwave 👍🏻😋
